Easy KETO Coconut Chocolate Drizzle Bars

Here we go whipping up another recipe in DIY With Chelsea's kitchen. Add this delicious coconut keto chocolate drizzle bar to your desert or snack rotation.

Let's start with why this is KETO and why you should have some of these laying around for midnight snacks. KETO means low to no carb, the higher percentage of cacao in chocolate the lower the carbs.
Equipment:
Small Pot
Ladle or Mixing Spoon
8x8 pan or loaf pan
Parchment Paper
Freezer
Microwave
Glass measuring cup or microwave safe bowl
Cutting Board
Knife
Ingredients:
2 Cups - Unsweetened Coconut Flakes
2/3 Cup Coconut Oil
2/3 Cup of Sweetener (I used Splenda- measures the same as sugar)
One Can Coconut Milk FAT** - Use the FAT** (There should be in a clump when opening can)
Note: If it is hot in your house this is probably melted.. like mine... It added an extra step and I pat dried off the extra fluids during the freezing process. If you are doing this tomorrow, pop your can of coconut milk into the fridge overnight.
1 Bakers Chocolate Bar (4oz)
1 90-100% Cacao Chocolate Bar (4oz)
Cinnamon (for dusting)
Hersheys Cocoa Powder (for dusting)
Instructions:
Add coconut oil, sweetener, and coconut milk fat and bring to a boil.
While waiting on mixture, add parchment paper to a 8x8 pan of choice or a bread loaf pan, the small the pan the thicker the coconut bars.
Add in 2 cups of coconut flakes to the boiling mixture. Stir together and turn off stove.
Add mixture into the 8x8 pan and put into the fridge or freezer.
freezer = couple hours
fridge = overnight
When coconut filling is firm, cut into cubes or bars of choice on a cutting board.
Cut up your chocolate into cubes and put into a glass microwave safe bowl or measuring cup.
Use 30 second intervals to start, following by 10-15 seconds.
Make sure to stir each time you take a break so you do not burn the chocolate.
Combining Chocolate & Coconut:
Use a small spoon to drizzle melted chocolate on your frozen or refrigerated coconut filling.
Flip Over once chocolate solidifies on your first side, repeat on the other side with drizzling.
Last but not least, Cinnamon and cocoa powder for dusting!


Storage:
Keep in cool place or freezer for longer life
Use a baggie or airtight container
