If you want to enjoy fresh, homemade bread without the carbs, this low carb seed bread recipe is a perfect choice. It’s packed with nutritious seeds, has a satisfying texture, and is easy to make at home. Whether you follow a low carb lifestyle or just want a healthy alternative to traditional bread, this recipe will become a staple in your kitchen.

Why Choose Low Carb Seed Bread?
Traditional bread is often high in carbohydrates, which can spike blood sugar and cause energy crashes. Low carb seed bread offers a way to enjoy bread’s comforting taste and texture without the carb overload. This bread is rich in fiber, healthy fats, and protein thanks to the variety of seeds used. Seeds like flax, sunflower, and pumpkin add crunch and nutrition, making this bread a filling and wholesome option.
Ingredients You Will Need (2LB Large Loaf)
Here’s a list of ingredients for this low carb seed bread. Most are easy to find in grocery stores or health food shops:
1 Cup + 3 Tablespoons Water 80-90 degrees F
4 Tablespoons Heavy Cream
2.5 Tablespoon Flax Seed Oil (or Olive Oil)
1 Tablespoon Splenda
1-1/4 Cups Whole Wheat Flour
1 Cup Almond Flour
2/3 Cup Oat Flour
2/3 Cup Brown Rice Flour
Vital Wheat Gluten 1/4 Cup
2.5 Tablespoons Flax Seeds
2-1/4 Teaspoon Active Yeast
These ingredients combine to create a dense, moist bread with a nutty flavor and crunchy texture.
Step-by-Step Instructions
Follow these steps carefully to bake your low carb seed bread:
Step 1: Preheat the Bread Machine and Prepare the Pan
Turn on your bread machine and select the cycle for your type of bread. On mine it was number 8 for Low Carb, 1.5 Lb (I made a smaller loaf - Please use 2 Lb for yours to follow this recipe) and Crust set at medium.
Step 2: Mix the Ingredients
In the bread maker pan, combine all\ Ingredients in the order listed above. For some reason they don't start the active yeast first, I do in my bread recipes.. I sprinkle over the warm water and let it go for a few minutes. You absolutely can put the ingredients in order; the active yeast being last. Personal preference.
Step 3: Press Start
Shut the lid, and press start. The paddle will do all the work while you sit back and relax. This will mix until it is ready to be formed, then you will remove the paddle and put the loaf back in a correct shape for baking. This will continue to rise anywhere from 1-2 hours. Don't touch it! Some bread machines will beep when it is headed into the next cycle.
I forgot my bread paddle in this loaf because I went to the grocery store :)... oops.
Step 5: Transfer to Plate to Cool
Remove the bread from the Bread Machine and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely. Cooling helps the bread firm up and makes slicing easier.
I found you can immediately add butter to the top to keep moisture in the crust. Definitely something to try next time for me. Let me know your thoughts on how yours turned out!
Tips for Best Results
Use fresh seeds for the best flavor and nutrition.
Ground flaxseeds can help the bread hold together better.
Let the bread cool fully before slicing to avoid crumbling.
Store leftover bread in an airtight container in the fridge for up to a week. You can also freeze slices for longer storage.
